A blended Cuvée: 50% Cinsault (60 years old) and 50% Pinot Noir (15 years old), grown on clay-limestone soils in the commune of Assignan, in the Saint-Chinian appellation.
100% destemmed grapes, with little intervention. Matured in vats for 6 months. Neither filtered nor fined, bottled with just a tiny dose of sulphur. 3000 bottles produced.
Dark cherries and spices, delicate but very intensely scented; Medium weight on the palate, considerably dense for a Pinot x Cinsault.
