Fruit is harvested manually and all the cuvées are vinified the same way. Vinifications are long - up to 30 days but his extraction is very gentle : up to 10 days cold maceration then gentle pumping over of the juice to stimulate fermentation After 15 days , the caps will be punched down more or less frequently depending on the vintage structure. The wines are aged in oak barrels from Burgundy, Troncais and Vosges forests not exceeding 1/3 new each year.
This plot lies just east of Mazis Chambertin and the wine has an intensely aromatic nose of peony and violet with a great weight and density.
