A showy but graceful take on Blanc de Noirs, achieved not through oenological pyrotechnics but through straightforward, fairly hands-off viticulture and winemaking. Grapes were sourced from family-owned plots planted by Aurore’s mother in the late ‘60s. Only 1,300 bottles and 77 magnums were produced.
An unexpectedly fruity nose with lime seltzer and green apple with a lanolin edge. The intensity builds on the palate, layering green fruit with red cherries and some smoky autolysis on the finish. Refreshing acid and a dusting of powdery texture leave an impression of litheness and delicacy. The finish is very clean.
This Champagne need to be paired with delicate dishes such as veal, lamb, red fruit dessert, Mediterranean dishes, Spicy fried poultry dishes.
Blend : 42% Chardonnay, 34% Pinot noir, 12% Meunier, 12% red wine Pinot Noir aged in barrels.
Harvests: 2017 harvest base, 40% reserve wines.
Vinification: Traditional little interventionist.
Élevage: 8 months in stainless steel vats to keep the purity perpetual reserve of red wine, partly aged in barrels.
Ageing in bottles: 3 years
Disgorgement: April 2021
Dosage: 5 g / L of a liqueur on a perpetual reserve basis which gives it roundness and deliciousness.
