Region: Champagne - Mesnil sur Oger Grand Cru
Terroir: Mesnil sur Oger Grand cru, place called “Malo” mid-slopes, very chalky soil, east / south-east exposure, plot in a "micro-climat ” and Chardonnay planted in 1990.
In accordance with the biodynamic calendar and with respect for people and
the environment. Harvest by hand at full maturity.
Spontaneous natural fermentation in barrels. Bottling after 12 months of ageing in barrels then 2 months in stainless steel vats.
Clear and brilliant wine. This wine has not been filtered or fined and without artificial tartaric stabilization.
The complex nose of white flowers, lemon balm, citron, acacia honey enhanced by Timut pepper.
Full-bodied and floral, we can discover the acacia flower, a hint of citrus, melted smoked citron which brings a certain extravagance to it, then a long suave and saline finish carried along by a refreshing bitterness.
